Happy Sunday! . . .
If you love pizza, you’ll love Khachapuri (khah-chah-POOR-ee)—“boats” of dough filled with ooey-gooey cheese. The cheesy bread was a favorite in the Republic of Georgia (a country between Russia and Turkey) before catching on with American diners in cities from New York to Los Angeles. We used refrigerated pizza dough to make an easy, delicious at-home version.
Khachapuri
SERVES
2–4
INGREDIENTS
- 1 cup grated mozzarella cheese
- ½ cup crumbled feta cheese
- 1 large egg, lightly beaten
- 8 oz refrigerated pizza dough, at room temperature
- Cornmeal, for dusting
- 1 large egg yolk
- 1 Tbsp butter
- Red pepper flakes, for garnish (optional)
- Parsley, for garnish (optional)
DIRECTIONS
One hour before baking, place pizza stone on rack in top third of oven. Preheat oven to 500°F.
In a medium bowl, combine cheeses and whole egg.
On a lightly floured surface, roll dough into an 11-by-7-inch oval. Transfer to a pizza peel or rimless cookie sheet dusted with cornmeal. Top evenly with cheese mixture, leaving a ½-inch border on all sides and a small well in center. Tightly roll long edges of dough toward center, covering some of the cheese. Pinch and twist narrow ends to create a "boat." Let stand, uncovered, 15 minutes.
Slide khachapuri onto preheated pizza stone. Bake 9 minutes. Open oven and pour yolk into well in center. Bake 1–2 minutes or until dough is golden (yolk should still be runny). Remove from oven. Top with butter; garnish with red pepper flakes and parsley, if desired.

INGREDIENTS
- 3 Tbsp extra-virgin olive oil, plus more to serve
- 1 large yellow onion, chopped
- 2 medium cloves garlic, finely chopped
- 1 Tbsp fresh rosemary, minced
- 2 tsp kosher salt, plus more to taste
- 1 tsp freshly ground black pepper, plus more to taste
- ¾ cup coarse stoneground yellow cornmeal (I could only find medium stoneground, not coarse and I went to and called five major grocers, no one had coarse, I think medium worked just fine)
- 1 bunch lacinato (Tuscan) (No idea if mine was lacinato, haha, kale, it was a big batch of great fresh looking leaves though and worked, might be a bit much for some tastes to use a giant bunch, so just decide what you like) kale, stemmed, leaves torn into rough 1-inch pieces
- 1 (15.5-oz) can cannellini beans, rinsed and drained
- 4 oz Parmesan cheese, stemmed, leaves torn into rough 1-inch pieces finely grated (2 cups), plus more for garnish.
DIRECTIONS
In a large pot over medium, heat oil until shimmering. Add onion, garlic, rosemary, salt and pepper. Cook, stirring, 3 minutes or until onion is translucent. Add 2 quarts water, then whisk in cornmeal; bring to a simmer. Reduce to low; cook, uncovered, 15 minutes, stirring occasionally and scraping bottom of pot to prevent sticking. Stir in kale and beans; cook, stirring, 5 minutes or until kale and cornmeal are tender. Stir in Parmesan; season with salt and pepper. Serve drizzled with oil and sprinkled with more cheese.
Serves 4–6.

Don't judge a book by it's cover . . .
Or, in this case, a plate!
I was just about to sit down to my eagerly awaited breakfast, looked at my plate and thought, "My twelve year old self would be absolutely horrified by my 50 year old self!" I mean, look at it...it is just NOT an appealing looking plate. But...my oh my...night-before cabbage and green onions roasted with a bit of olive oil, garlic powder, kosher salt and pepper at 375 for a smidge over 25 minutes...that plate of delights tastes as good as a giant piece of chocolate cake and moosetracks ice cream would've to my 12 year old self!It's really all I can do not to eat every wedge of roasted cabbage the minute it comes out of the oven. Sometimes...just sometimes...I think I have a rather strange palate! (-:
