After dropping by the in-laws to snag some tomatoes for salsa (mine are ripening at a snails pace), I was treated to a slow-roasted red pepper that was OUT OF THIS WORLD! So, I decided the salsa will wait and today I'm slow roasting tomatoes.The kitchen smells amazing!
I know they're not pretty but I'm still enamored with the fact that I grew some great eggplants. I didn't end up baba ghanoushing them (-: instead, I grilled them and made fresh mozzerella and basil pesto "sandwiches" out of them (sprinkled with grated parmigiano reggiano).
YUMM!!(I'M NOT KIDDING, NOT PRETTY, BUT SOOOO GOOD!!)
