Hey. . . that's not rhubarb!
And I'm pretty sure I don't see any dream bars either, hmph.
Ok...at least there's rhubarb in this one.
Still no bars but still an asparagus and teeny tiny kale plants.

My asparagus "crop" is still one or two, I guess three, once, every few days. So, I've learned to just enjoy them straight out of the garden, uncooked. I have to say, I find them rather delightful that way. And, I feel like I've mentioned this before, hahaha!
The baby kale was from a thinning session out in the FFYG (fend for yourself garden) that I figured, why can't I just put those in my one home-grown salad I'm going to make this weekend with the three ripe strawberries I saw and all that lettuce from the "perspectives" post. Haven't made the salad yet but the kale is in a little vase waiting, as is a hunk of baby plant dill I thinned (they reseed themselves everywhere every year).
So, let's get on with the dreamy rhubarb already . . .
Five cups of rhubarb cut in roughly two inch matchsticks.
I actually used a saved, magazine page recipe from a 2019 allrecipes magazine that I more than likely got for free at "the little library" as we call it. Pre-covid, I'd stop in there regularly for my free magazines as they put the outdated ones on a shelf for all. Of course, the fancy big city library system just to the south of our "little library" doesn't do that for its patrons (whose tax dollars buy the 100's of magazines they have throughout their gigantic library system). But anyhoo, family blog, not a political blog...moving on...
I tried to give a link, and you can find it online but even though it's on the AR website, it's different than this so I thought I'd just post the actual one I used. Boo-hoo though, I didn't have ice cream and didn't feel like going out to get some. The crust is pretty much shortbread, which was tasty, but could have really used the ice cream. I enjoyed the twist of cutting the rhubarb in matchsticks, unique, kind like rhubarb in the first place. (-:
It's worth the make, just be sure to have some great vanilla ice cream with it!
Postscript! Whoa...how fun was this...I was just heading over to my recipe sidebar to post Rhubarb Dream Bars and LOW AND BEHOLD . . . there was already a RHUBARB DREAM BARS there!!! Awww, so great to follow the link and see my awesome college graduate back in 6th grade had made her own Rhubarb Dream Bars, different than mine today.
