Well, I'm going to post this photo even thought it doesn't look nearly as appealing as it tasted. Why? The concept of this dish is one of our (the adults in the house (-:) favorites and it's SOOOO easy. What is it, you ask? Roasted vegetables! You can throw in anything you'd like, and I do enjoy cauliflower but not at $4.99 a head! Tonight I used two ears of corn, half a sweet potato, two beets, two carrots, a bunch of green onions and six garlic cloves cut in half. Mixed them with a large dollop of olive oil, sprinkled with kosher salt, dried parley and a small bit of Crazy Jane's Mixed Up Salt. Dumped it onto a large baking sheet and roasted at 450 for about 45 minutes or so. YUMMMMM!!!!! (The kids enjoyed raw baby carrots....)
