This thing's a KEEPER!!
O.K., you must find an Aldi's and scour the aisles for this food chopper thing. It was only $9.99 (and the catch drawer thing is a measuring cup too!!! (-:) and it is just about as exciting as the first time I ran my food processor. I put carrots on that little grate in the green thing there, used some elbow grease to press down the lid to the right and WHAM, perfectly diced carrots. Oh my goodness I don't know what to do with myself, absolutely AMAZING. While I was raving about it tonight H suggested I call someone to make an advertisement for them, haha.
And the receipt comment? When I was at the store today I kind of jokingly picked up this chopper thinking there's no way it's going to work. Being Aldi's though, I didn't know if I could try it out and still bring it back if I didn't like it. So, I asked at the counter. She gave me the green light to bring it back, with the receipt, for any reason within thirty days. After which I completely forgot what she said and tossed the receipt in the trash on my way out of the store, Oy!

I mixed those perfectly diced bits into this scrumpdiddlyumpcious Chicken Pot Pie which was brought to the lake for an absolutely perfect end to a hot, muggy day. The top is coated with fresh thyme and 1/2 shredded cheddar, 1/2 shredded parmesan...Oh.My.Goodness...that crispy, flavorful crust was amazing. I think I've only made chicken pot pie once before in my life and this was a TOTAL winner...especially with my newfangled veggie chopper!
A little side dish to this dinner was the greens of the beats I picked yesterday. Sautéed up with some garlic, olive oil, squeezes of lemon juice and a bit too much sea salt (I keep forgetting how salty sea salt is). Oh, and I had stored those leaf stalks in a vase of water overnight which ended up red from the stalk coloring and I used that to add moisture to the pan when sautéing. Delicious.
Oh, and how perfect to have run into the kids' piano teacher at the lake to share a slice of pot pie and beat greens with after her swim! (-:
If all this sounds just so lovely and grand (maybe it doesn't to you, but it sounds just a little too perfect to me)...keep in mind that I practically boycotted cleaning and cooking for the last two thirds of August out of pure exasperation. This very well might have been the first real meal I've made since August 2nd, hahahahaha! And oh, the state of my kitchen before today...let's just say, bring on September!
