I was blessed to wake up to this on my bedside table this past Friday, Saturday and this morning from way down in Houston, TX! A great longtime friend hosted myself and another friend for the weekend as this is all three of ours big 5-0 year. What a fun time together!
On Friday we day tripped down to Galveston. On our way over to the Bolivar Peninsula, just east of Galveston, we were hit with a short, but H.E.A.V.Y. rain storm as we drove along the shore of the Gulf of Mexico. Well, naturally I wanted to say I at least dipped my tootsies in the Gulf and as the rain finally got down to just a pitter patter and we neared the last piece of road before we made our turn north, we found a turn off...and low and behold, no kidding, this giant cross was just plunked right down at the shore. No idea why, no signs, an area with a bunch of broken up sea wall looking concrete, a shore of sea shells and this cross. Wow!

What would a post in this here little ol' blog be without a recipe or food of some kind.

Well, my good friend knows I do love my gardens, vegetables and all that stuff.
So, she got us some cactus (podales) to grill up!
How cool is that?!

We used olive oil and I did overcook a smidge, but we all still liked them and their uniqueness and every bit was eaten except the far too charred one.
Now, we prepare to go forward with another week, rising tomorrow proclaiming once again:
