The Fall "Hurrah" of Garden Veggies . . .

 These eggplant were set out in the large shed garden at the start of summer and wished "best of luck" by me as I don't water out there and very light weeding. They made it and produced a most delicious dish, recipe below. I LOVE that the garlic and parsley are also from my garden. 💜

This pic is not the final result. I was making this around 8:30p.m., because I picked the eggplant and then couldn't get to preparing it for a few days. It is a panic situation, haha, when you've got beautiful eggplants in your fridge, home-grown, and they're threatening to expire while you what...work, raise kids, fix the house, etc... ha! So...after the point of this picture, I finished cooking, sat exhausted and ate. It was just as delicious and I more well rested, the next day! (-:

There's a batch of pics that are supposed to go in the middle of the eggplant and tomatillos but haven't arrived in my email box from my iphone, then able to transfer to my desktop to then upload onto this little ol' site...yep, quite the rigmarole...if they ever show up (okra, corn, roasted veggies), I'll be back...I wouldn't recommend breath holding...(-:

I did get a million and a half of them too, out of just two plants.

I was over the moon about the beets I threw in at a side, back corner of the house for fun. My favorite thing to do with them was to cube them, maybe 1/2 inch cubes, throw some olive oil, salt, pepper and fresh thyme on them, wrapped in aluminum foil and grilled until soft. Oh.My.Goodness.

I got WAY artsy with all the produce on the ol' picnic table this summer. Didn't love the shine lighting on this beet but couldn't get rid of it at certain times of day and didn't have all day to wait for the lighting to change. (-:  This is titled...beet with sprigs of thyme...hahaha!


When all is said and done...this is what we'd really like to make though, right??
